I discovered this recipe when my husband and I first started trying meatless recipes. I've added optional chicken, in case you are looking for a chicken stir fry recipe! When I have meat-eating guests, I cook the chicken separately and add it at the end.
When I make the nut sauce, I put all the sauce ingredients into my Nutribullet. Super convenient! You could also make the sauce ahead of time and store it in a jar in the fridge.
The best part about this recipe is that you can use any veggies in your fridge. Mix and match whatever you have!
